APPLE & PEAR GRANOLA CRUMBLE

Crumble is one of the easiest desserts to make. Whatever you do it always tastes perfect! There are hardly any ingredients, so you can throw it together really easily. Apples and pear are one of my favorite combinations! It makes a sweet and gooey fruity layer at the bottom, covered in a crumbly granola topping and baked in the oven to bring it all together – served warm with a scoop of coconut yogurt or Italian gelato, it is perfect for any occasion.

INGREDIENTS

Pre-made granola:

  • 350g or 3 cups of granola

  • 2 tablespoons of chia seeds

  • 2 tablespoons of coconut oil

  • Pinch of cinnamon

  • Splash of maple syrup

Homemade granola:

  • 1 cup of almonds

  • 1 cup of pecans

  • 1 cup of oats

  • 1/4 cup of maple syrup

  • 2 tablespoons of coconut oil

  • 2 tablespoons of cinnamon

Fruit base:

  • 4 apples

  • 2 pears

  • 500ml of apple juice

  • Pinch of cinnamon

  • Splash of maple syrup

  • Optional: 2 cups of berries 

METHOD

  1. Preheat oven to 180C.

  2. Start by removing the core, then slicing the apples and pears into bite-sized pieces.

  3. Place the apples and pears in a saucepan and cover with a layer of fresh apple juice – bring to the boil and let simmer for about 10-15 minutes, until the fruit pieces are really soft.

  4. While the fruit cooks, place the granola and chia seeds into a bowl, adding coconut oil, a splash of maple syrup and cinnamon and giving it a good mix with your hands. Alternatively, you can also make your own granola by adding a variety of nuts, e.g. almonds, cashes and pecans into a food processor and blend for about a minute until a flour forms. Add this flour to a mixing bowl together with oats.

  5. Once the fruit is cooked, drain the liquid and put it in the bottom of a baking dish. Sprinkle with cinnamon and a good drizzle of maple syrup before mashing everything together with the back of a fork, then sprinkle the granola crumble on top.

  6. Place in a 180C oven for 20 minutes, until the crumble begins to turn a golden brown

  7. Enjoy it for breakfast or afternoon snack , adding a little cashew and almond yoghurt, or ice cream.
