PEANUT BUTTER ENERGY BALLS

These little peanut butter energy balls are the perfect pick-me up. They are packed with delicious ingredients and make a perfect snack throughout the day, before or during a run.

Ingredients

  • 400g medjool dates

  • 150g of oats

  • 100g of roasted peanuts

  • 2 tablespoons of peanut butter

  • 2 tablespoons of coconut oil

Method

  1. Place the nuts and oats into a food processor and blend until they form a chunky flour, then add the dates, coconut oil and peanut butter. Blend everything up until a sticky mix form. Then remove from the processor and put into a separate bowl.

  2. Scoop out a fair amount of the mixture with your hands. Press with your hands and roll into balls. Place them onto a tray and leave to set in the fridge for about 2 hours. They will last for a few days.

  3. Remove from the fridge about 15 minutes before eating to allow them to soften.

Note: Unfortunately, I did not take any photos of the finished cake, so I had to borrow one of Nourishing Amelia that looked most similar to my version. I will update the post as soon as I get around making the cake again.
